N. Italian ribs

 

Northern Italian Spareribs with Balsamic Glaze

 

These ribs are amazingly delicious and make a great party appetizer or main entrée. They are cooked in the oven so no grill is necessary.

Combine in a bowl

2 Tbsp extra -virgin olive oil

2 Tbsp chopped rosemary

1 ½ Tbsp kosher salt

2 tsp ground black pepper

2 tsp chopped sage

2 tsp chopped thyme

2 tsp sweet paprika

1 tsp crushed red pepper

1 tsp ground coriander

½ tsp ground allspice

1 ½ Tbsp fennel seeds, slightly crushed or pulsed a few times in a spice or coffee grinder.

-6 pounds of pork spareribs

Rub the paste all over the ribs and let stand covered at room temperature for two hours or refrigerate overnight.

Preheat the oven to 325 f. Place the ribs meat side up on a large, rimmed baking sheet pan and roast for 2 hours until fork tender. Remove from the oven.

-4 Tbsp aged Balsamic vinegar

Preheat the broiler. Brush the meat side of the ribs with balsamic vinegar and broil about 6 inches from the heat until brown, about 3 minutes. Remove from oven and let stand for 5 minutes, cut between the ribs and serve. Enjoy
