Northern Italian Chicken
Northern Italian Chicken with Cannellini beans
This is a fabulous 30 minute recipe that tastes like it took all day to prepare.
Servings 2 to 3
Have ready 4 boneless skinless chicken thighs
Mix together and coat the chicken with the mixture.(you can do this in the morning, it adds more flavor if it sits)
½ tsp salt
½ tsp pepper
1 tsp dried thyme
1 tsp dried oregano
1 tsp dried rosemary
1 tsp red pepper flakes
Mince
2 cloves of garlic, set aside
Have ready
2 Tablespoons of olive oil
1– 15oz can of Cannellini beans , drained and rinsed.
¾ cup chicken stock
¼ cup heavy cream
½ cup finely chopped sun dried tomatoes
1 Tablespoon grated parmesan cheese
Chopped Fresh Basil or Italian parsley for garnish.
-In a 10 inch cast iron skillet heat the oil over medium heat, sear the chicken thighs until slightly golden, about 5 minutes per side. Transfer to a plate.
-Return the skillet to medium heat. Add the minced garlic and cook for 30 seconds, stir in the broth, cream, tomatoes and cheese and stir to combine, simmer for 1 minute.
- add the beans and simmer for 5 minutes ( if you want a thicker sauce you can crush some of the beans with the back of spoon as you stir)
- return the chicken and any juices on the plate to the skillet, turn the chicken over as it simmers for 5 minutes.
-Garnish and serve
