Roasted Corn Salad

This roasted corn salad was something I had visiting my parents in Longboat key. There is a deli there that makes it. I loved it and decided to break it down and make it at home. This is my version and a few years ago we went back to Longboat Key and had some and my wife said, “what we make at home is much better”. It is a great an interesting salad to bring to any get together.  EnjoyThis roasted corn salad was something I had visiting my parents in Longboat key. There is a deli there that makes it. Maryland Crab Cakes

A family favorite. The base of this recipe came from a Baltimore restaurant cook book my brother found while going to school there, It was put out more than 50 years ago. The Panko crumbs are an update. They give it a fabulous crunch to compliment the creamy rich center. You can use regular bread crumbs if you prefer them. These cakes go very well with a cool salad or slaw, as an appetizer or main dish. Our favorite slaw is this cool and refreshing green mango slaw recipe a friend of ours had at the Winnipeg Folk Festival.
Tourtiere

This is a delicious, spiced French Canadian meat pie typically served at Christmas in Québec, but it’s wonderful anytime.

Taralli

These addictive Italian snacks are enjoyed with white wine; Italians often dip them in the wine. You can find these at some grocery stores but this homemade version is crisper, lighter and much more flavorful, especially when made with Tipo 00 flour.
Balsamic fig, pear or green apple and brie pizza

This pizza is always a stand out when we do a pizza party!

Luke’s Cuban sandwich

Over the 40 years I have lived in Florida I have lived in Miami, Tampa and Orlando and the Cuban sandwich has always been a part of living in these places. As the Cuban has become a mainstream sandwich the quality can be all over the map, so I decided to make my own slightly upscale version and it has always been a hit. You can make extra and cut and wrap them, they hold well and make great grab and go lunches for kids and adults. I provided pictures for assembly, a sandwich grill press is the best way to make them, although you can use two heavy heated skillets, but it’s not as easy.

Delicious Homemade Pizza

Fresh Homemade Pizza and Homecrafted Beer! Can summertime get any better?
Cottage Pie (Also called Shepard’s pie when made with lamb)

Spanish Shrimp in Garlic Sauce (Gambus Al Ajillo)

This is a common Tapa served everywhere in Spain, but here in the US it’s often poorly made with shelled farm raised shrimp, much of the flavor comes from the shell. It is very important to use wild caught shrimp not farm raised, we use gulf shrimp. The garlic sauce is addictive, so have lots of crusty toasted bread to soak it all up. It is important to cook this dish in a Dutch oven on the stove, it retains the moisture in the shrimp. After everything is prepped it only takes a few minutes to cook, so be ready to serve it as soon as it’s done.
Arugula and Caramelized Pear Salad

This salad is a wonderful balance of spicey, sharp and sweet. It pairs very well with roast chicken.

Grilled Beef Steak with a great crust

We love a great steak and over the years we have found some ways to make it better, here are some tips.

Currant and Almond paste Scones

The almond paste makes these scones light and tender while adding wonderful flavor. Serve warm or cool.

Potato-Crusted Fish Filet

This is a great way to cook fish filets, crispy on the outside and moist and tender on the inside, and the presentation on the plate is beautiful. The trick to this dish is that the Russet potatoes have to be cut paper thin using a mandoline slicer.

Chicken Rosemary Pot Pie

This is an updated version of the standard pot pie and so much better, rich, and delicious.
