A family favorite. The base of this recipe came from a Baltimore restaurant cook book my brother found while going to school there, It was put out more than 50 years ago. The Panko crumbs are an update. They give it a fabulous crunch to compliment the creamy rich center. You can use regular bread crumbs if you prefer them. These cakes go very well with a cool salad or slaw, as an appetizer or main dish. Our favorite slaw is this cool and refreshing green mango slaw recipe a friend of ours had at the Winnipeg Folk Festival. |

Over the 40 years I have lived in Florida I have lived in Miami, Tampa and Orlando and the Cuban sandwich has always been a part of living in these places. As the Cuban has become a mainstream sandwich the quality can be all over the map, so I decided to make my own slightly upscale version and it has always been a hit. You can make extra and cut and wrap them, they hold well and make great grab and go lunches for kids and adults. I provided pictures for assembly, a sandwich grill press is the best way to make them, although you can use two heavy heated skillets, but it’s not as easy.

Spanish Shrimp in Garlic Sauce (Gambus Al Ajillo)

This is a common Tapa served everywhere in Spain, but here in the US it’s often poorly made with shelled farm raised shrimp, much of the flavor comes from the shell. It is very important to use wild caught shrimp not farm raised, we use gulf shrimp. The garlic sauce is addictive, so have lots of crusty toasted bread to soak it all up. It is important to cook this dish in a Dutch oven on the stove, it retains the moisture in the shrimp. After everything is prepped it only takes a few minutes to cook, so be ready to serve it as soon as it’s done. |

Agrodolce means sour and sweet in Italian and is a condiment made in Sicily, there are many variations, in this recipe it is used more liberally than it would normally be used.
