Hombrewings

These wings have a story behind them from our days as a Liquor, beer, wine and homebrew shop. We had the neon sign you see in the newsletter, in the store window. A woman, who had a few to many, came into the store and slurred, “I want some of them Hombre wings you got on your sign.” We all got a big laugh, (there was always a gang of homebrewers hanging out in the store in those days) but it stuck in my head and I decided to create a recipe for the wings. I based it on the classic, Arroz Con Pollo, a dish I had made many times. After a few tests with my kids and friends, this was the clear winner. Every time I make these and we have a guest who has never had them they say, you could open a restaurant or a food truck with just these! OK Ron, here is the secret recipe; I expect these to be served at Ron’s restaurant at the Brix Project in Titusville soon. (That’s an inside joke, ask Ron)

 

Hombrewings with Salsa Verde hot sauce

7 pounds of raw chicken wings (this will yield about 40 wings) wing tips removed and cut in two at the joint.

12 hours prior to cooking, place the wings in a large bowl and add the following:

2- packs of Sazon seasoning (coriander and annatto) Note: this product contains MSG, MSG free products are available)

-1½ tsp ground cumin

-1 tsp chili powder

-2 tsp oregano leaves

-1/2 tsp garlic powder

-½ tsp salt

-2 tsp cider vinegar

Toss well with a spoon or by hand, but wear gloves, the annatto will stain your skin.

Cover and refrigerate overnight, 12 hours.

Salsa Verde hot sauce

Add to a blender jar

16oz. jar of Salsa Verde, Pace works well, but use your favorite, just be sure it’s not watery.

With lid on and the blender running, slowly pour through the hole in the lid until smooth.

1- 4oz stick of melted salted butter

1 to 3 tsp of Louisiana hot sauce

Frying the wings

You can fry the wings in batches in 375F oil for 10 plus minutes until golden brown and crisp.

I prefer to precook the wings by frying at 325F until they are cooked through but not brown, place on a sheet pan and refrigerate. When you are ready to serve, heat the oil to 375F and fry the wings to golden brown and crispy, this will only take a few minutes.

Have your guests toss the hot wings with some of the sauce and enjoy.
